At Conceivable, we know that fantastic fertility starts with good nutrition — and we also know how hard it is to stick to eating a healthy, balanced diet when you hit that 3pm slump. Today, we wanted to share one of our favorite sweet treats that is also a great, healthy snack to help you power through your afternoon. Best of all, they're easy to make and munch on the go. I'm not going to lie though, once you try these, you'll be adding one of these guilt free treats after dinner for dessert too ;).
Recipe: Amazing Date Balls (makes about 24 balls)
Ingredients:
- 1.5 cups raw mixed nuts
- 24 pitted majool dates
- 2 Tbsp coconut oil
- 1/4 cup shredded coconut plus more for coating
- 2 Tbsp unsweetened cocoa powder (more or less to taste)
- 1 tsp cinnamon (more or less to taste)
- Optional: a little dash of cayenne pepper
Pulse nuts in a food processor until they are coarsely ground. Add remaining ingredients and pulse until a sticky, cohesive texture is reached. If the mixture is too crumbly to hang together, add a couple more dates. Roll mixture into balls of about 1 Tbsp each and roll in shredded coconut to coat. Store in the fridge. Makes approximately 2 dozen.
These sweet little snacks are super versatile and beg for experimentation. You can add other dried fruits like apricots, blueberries, goji berries, schisandra berries or cherries as a substitute for some of the dates. Play around with different nut combos. Add healthy additions like flax or chia seeds, cocoa nibs, whatever! With a nice mix of fat and protein, they're great for giving you a little boost of lasting energy to power you your busy day, and healthy enough to be guilt-free.
Nutrition: Serving size: 1 ball; calories: 120; fat: 5.5g; carbs: 18.9g; fiber: 2.2g; protein: 1.9g. For a lighter snack, some or all of the coconut oil can be substituted for water.
